Addendum to Unprocessed Tuesdays

As it turns out, tofu is still a more environmentally friendly choice than, say, beef,  when it comes to carbon output. While any commercially produced food will still be more damaging than a cucumber plucked from your garden, the electricity and fuel used by the tofu factory produces .55 pounds of greenhouse gases. Your average beef factory produces about fifteen pounds of greenhouse gas emissions. The entire meat industry contributes between 14 to 22 percent of the 36 billion tons of CO2 equivalent gases we pump into the atmosphere ever year. The growth of the soy beans used in the production of tofu in the U.S. removed enough greenhouse gases from the atmosphere in 2009 to be the equivalent of taking 21 million cars off the road.

So maybe tofu isn’t such a bad processed choice after all! But I’m still going unprocessed tomorrow ;D
